What's For Dinner?

What are you having for dinner? I had some leftover roast chicken (from the Kroger deli - I did NOT try to do a roast chicken dinner midweek!), and we decided to make some chicken stock. It has simmered all morning and the house smells lovely, and I found this wonderful recipe: Chicken Corn Chowder.

I think I'll pair it with some rustic bread and maybe a little bit of shredded cheese for the top. What's for dinner at your house?

Oh, and for my month of gratitude - I am thankful for chilly fall days and hot soup!

Being thankfull for fall days sounds great I like the onset of winter during autumn also. However it is Spring in sunny one day cold the next Melbourne ( now it is 14c outside )and instead of having bbq and salads my mind has been on soup. I especially love chowder especially seafood chowder .

yummm that sounds delish ! I made chicken casserole which is a staple in our house. Just rice, cooked chicken, hot sauce mixed in with mushroom soup and cheese. Layered starting with the rice and put in the oven. to warm it all the way through. One of our favorites ! I think I will try that soup next week. Thanks for the idea.

It's too early for dinner. I hadia sausage gravy and cat head biscuits for breakfast. I didn't know it was the "month of gratitude," but I'm thankful for blogger friends with the same name as mine! ;~)

Terri, your chicken chowder sounds yummy! We had sloppy joes, mac and cheese and peas. My son's choices this time around. :)
